As its grand doors swing open, it's not just the opulence of the hotel that's capturing the attention of travel connoisseurs, but an astonishing array of 36 restaurants nestled within its walls. What's truly remarkable is the Miami connection, a bold move that sees the Magic City's beloved dining brands making their mark in Las Vegas

Among the culinary stars making this cross-country journey is David Grutman, the renowned nightlife impresario and restaurateur. Grutman's iconic Miami brands, Komodo and Papi Steak, are set to bring their unique flair to Las Vegas, infusing the city with a taste of Miami's dynamic dining scene.

The connection deepens with Fontainebleau Miami Beach's own distinguished brands making the leap. Vida, with its sumptuous all-day dining, Chez Bon Bon's exquisite confectioneries, the vibrant Mediterranean flavors at La Cote, and the standalone restaurant sensations that are some of my favorite, Miami Slice and El Bagel, all bring a slice of Miami's diverse culinary landscape to Las Vegas.

Having worked together at the Loews Miami Beach Hotel with Lure Fishbar, I've witnessed first-hand his exceptional culinary skills and passion. Capon's latest venture, Capon's Burgers, is set to become a Las Vegas favorite, offering gourmet burgers that are a testament to his culinary prowess.
